Lavender Scottish Shortbread

Lavender Scottish Shortbread

Try this lavender twist on this traditional buttery treat.

Ingredients:

  • ½ pound butter
  • ½ cup sugar
  • 2 ½ cups sifted flour
  • 2 tablespoons rice flour
  • 1 tablespoon ground lavender
  • Preheat oven to 325 F.

Preparation

  • Beat butter until creamy.
  • Add 2 tablespoons sugar at a time, beating all the while.
  • Add sifted flour ½ cup at a time while beating.
  • Pat down in 9-inch square pan.
  • Prick with fork.
  • Bake at 325 degrees for 50 minutes or until light brown.
  • Remove, sprinkle with a little sugar and let cool 10 minutes before cutting into small rectangles.
