Ratatouille with Herbes de Provence

This recipe for ratatouille with Herbes de Provence is a great way to incorporate fresh summer produce or veggies from your own garden!

Ingredients:

 

Directions:

  1. Preheat oven to 375 degrees F.
  2. Heat oil in a large skillet. Add the onion and garlic and cook for 3-5 minutes or until the onions are translucent.
  3. Add the canned diced tomatoes, oregano, and dried basil. Lower heat and cook for 8-10 minutes.
  4. Spread mixture evenly on the bottom of a round baking dish.
  5. Arrange the sliced zucchini, summer squash, and tomatoes in a circular pattern. Season with salt, pepper and Herbes de Provence.
  6. Cover with foil and bake for one hour or until veggies are tender.
  7. Let cool, garnish with fresh basil sprigs and serve!
